Fluffy Vegan Chocolate Chip Pancakes

Ingredients

  • 1/2 ripe banana or 50g apple sauce
  • 1 tsp apple cider vinegar
  • 100ml plant milk
  • 50g oat flour
  • 40g rice flour
  • 1 tbsp soy flour or other egg replacement
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • pinch of salt
  • small hand of dark chocolate chips

Preparation

  1. Mash the banana and mix it with apple cider vinegar and plant milk.

  2. Mix the flours, baking soda, baking powder, and salt.

  3. Mix all ingredients together.

  4. If needed, add more plant milk.

  5. Mix in the chocolate chips.

  6. Bake the pancakes on each side in a well-coated pan with a tiny bit of oil.

  7. Serve with your favorite toppings.

Tips

  1. You can use different flours like spelt or wheat for variety, but oat and rice flour make the texture super fluffy and yummy.
