Vegetarian Breakfast Muffin with Poached Eggs
Ingredients
- 1 sour dough muffin
- Spreadable butter
- Italian-style vegetarian ham slices
- 2 eggs
- Light cheese slice
- Peashoot salad
- Sea salt
- Fresh chives
- Chilli flakes
Preparation
Lightly toast the sour dough muffin
Spread butter on the toasted muffin
Add the vegetarian ham slices on top
Poach two eggs until desired doneness
Place the cheese slice on the muffin
Add the poached eggs on top of the cheese
Top with peashoot salad
Season with sea salt, chives, and chilli flakes to taste
