Spiced Tofu Bolognese with Marinade

Ingredients

  • 1-14oz pack of extra firm tofu
  • 1-1/2 tbsp gluten-free tamari or soy sauce
  • 3 tbsp nutritional yeast
  • 1-1/2 tsp chili powder
  • 1-1/2 tsp smoked paprika
  • 1-1/2 tsp chipotle powder
  • 3/4 tsp garlic powder
  • 1-1/2 tbsp olive oil (optional)
  • Tomato sauce (equivalent of about 2-15oz cans or 4 cups)
  • Pasta (quantity as desired)

Preparation

  1. Pat dry 1-14oz pack of extra firm tofu and crumble with hands into size similar to ground meat, then set aside.

  2. Mix together marinade: 1-1/2 tbsp gluten-free tamari or soy sauce, 3 tbsp nutritional yeast, 1-1/2 tsp chili powder, 1-1/2 tsp smoked paprika, 1-1/2 tsp chipotle powder, 3/4 tsp garlic powder, and 1-1/2 tbsp olive oil (optional).

  3. Rub marinade evenly over tofu crumbles.

  4. Bake on a parchment-lined baking sheet at 375F, tossing after about 15 minutes and continuing to cook until browned but not burnt.

  5. Mix the baked tofu with homemade or store-bought tomato sauce and simmer for about 15 minutes until slightly thickened, using desired amount of sauce.

  6. Cook pasta in the same pot by adding it after the sauce has simmered a few minutes, then cover and simmer until pasta is done, or cook pasta separately and add when serving.
