Herring and Bell Pepper Salad with Tahini Sauce
Ingredients
- 2 cups cubed herring
- 1 medium sweet red bell pepper
- 1 medium sweet green bell pepper
- 1 medium sweet yellow bell pepper
- 1/2 large head lettuce, cut into small pieces
- 1/2 cup cooked chickpeas
Sauce
- 1/2 cup mayonnaise
- 1/2 cup tahini
- 1/4 cup lemon juice
- 1/4 cup olive oil
For serving
- Fried bread
Preparation
In a deep bowl, place the lettuce, green, yellow, and red bell peppers, chickpeas, and herring, and set aside.
For the sauce: In a deep bowl, place mayonnaise, tahini, lemon juice, and olive oil, and using a hand whisk, mix until a smooth sauce forms.
Spread the sauce over the salad, and using a wide plastic spoon, mix well to combine completely. Then serve with fried bread.
