Herring and Bell Pepper Salad with Tahini Sauce

Ingredients

  • 2 cups cubed herring
  • 1 medium sweet red bell pepper
  • 1 medium sweet green bell pepper
  • 1 medium sweet yellow bell pepper
  • 1/2 large head lettuce, cut into small pieces
  • 1/2 cup cooked chickpeas

Sauce

  • 1/2 cup mayonnaise
  • 1/2 cup tahini
  • 1/4 cup lemon juice
  • 1/4 cup olive oil

For serving

  • Fried bread

Preparation

  1. In a deep bowl, place the lettuce, green, yellow, and red bell peppers, chickpeas, and herring, and set aside.

  2. For the sauce: In a deep bowl, place mayonnaise, tahini, lemon juice, and olive oil, and using a hand whisk, mix until a smooth sauce forms.

  3. Spread the sauce over the salad, and using a wide plastic spoon, mix well to combine completely. Then serve with fried bread.
