Zesty Anchovies and Burrata on Toast

Ingredients

  • 1 thick cut slice sourdough
  • 1 garlic clove
  • 1 beef tomato
  • 4-5 anchovy fillets
  • 1/3 burrata
  • Zest of 1/2 lemon
  • Handful of basil leaves
  • 1/2 to 1 tablespoon olive oil

Preparation

  1. Heat your olive oil in a small frying pan over a medium-high heat.

  2. Brush both sides of your sourdough well with your halved garlic.

  3. Once the pan is hot, toast your sourdough until golden brown and crunchy on both sides.

  4. Spread the burrata over your toast, followed by tomato slices, anchovy fillets and fresh basil.

  5. Zest plenty of lemon rind over everything and finish with some freshly ground pepper and another drizzle of olive oil.
