Savory Rolled Turkish Pastry
Ingredients
- 125 grams margarine
- 125 ml vegetable oil
- 1 egg
- 1 egg white
- 2 tablespoons yogurt
- 2 packets baking powder
- grated kaşar cheese from 4 thin slices
- about 100 grams strained cheese
- 1 teaspoon grape vinegar
- 1 level teaspoon salt
- 1 level tablespoon sugar
- 1/2 teaspoon ground mahleb
- 3 cups flour (250 ml per cup)
Topping
- 1 egg yolk
- 1 teaspoon vegetable oil
- 1 teaspoon yogurt
- sesame seeds
Preparation
Mix the margarine and other ingredients except flour and cheeses at room temperature.
Add the flour and cheeses to form a soft dough that does not stick to hands.
Roll out the dough to 1 cm thickness and cut into circles using a glass rim.
Roll the circles into loose rolls.
Brush the rolls with a mixture of egg yolk, 1 teaspoon vegetable oil, and 1 teaspoon yogurt, then sprinkle or dip in sesame seeds.
Bake in a preheated 180°C oven until the top and bottom are golden, about 35 minutes.
