Irresistible Bakery Chocolate Chip Muffins

Ingredients

  • 1 3/4 cups Self Raising Flour
  • 1/4 cup Protein Powder (@macr0mike vanilla - d/c “amb-han”)
  • 1 cup Coconut Sugar
  • 1 1/4 cup Almond Milk
  • 1/3 cup EV Olive Oil
  • 1 tsp Vanilla
  • Pinch of Salt
  • Choc Chips (amount to taste)

Preparation

  1. Preheat oven to 180°C.

  2. In a large bowl, sift together self-raising flour, protein powder, and coconut sugar.

  3. Add almond milk, EV olive oil, vanilla, and a pinch of salt. Mix until well combined.

  4. Gently fold in choc chips.

  5. Spoon the batter into a silicone muffin tray.

  6. Bake in the preheated oven for 25-30 minutes or until the muffins are cooked through.

  7. Once baked, let them cool before serving.
