Irresistible Bakery Chocolate Chip Muffins
Ingredients
- 1 3/4 cups Self Raising Flour
- 1/4 cup Protein Powder (@macr0mike vanilla - d/c “amb-han”)
- 1 cup Coconut Sugar
- 1 1/4 cup Almond Milk
- 1/3 cup EV Olive Oil
- 1 tsp Vanilla
- Pinch of Salt
- Choc Chips (amount to taste)
Preparation
Preheat oven to 180°C.
In a large bowl, sift together self-raising flour, protein powder, and coconut sugar.
Add almond milk, EV olive oil, vanilla, and a pinch of salt. Mix until well combined.
Gently fold in choc chips.
Spoon the batter into a silicone muffin tray.
Bake in the preheated oven for 25-30 minutes or until the muffins are cooked through.
Once baked, let them cool before serving.
