Baked Peanut Butter Banana Oatmeal Bites
Ingredients
- 2 large bananas
- 1 cup peanut butter
- 1/3 cup maple syrup
- 1 flax egg
- 1 tsp cinnamon
- 1 tsp baking soda
- Pinch of salt
- 1 cup of gluten free rolled oats
- 1/2 cup vegan chocolate chips (optional)
Preparation
Preheat oven to 325 degrees Fahrenheit. Spray a 9-inch square baking pan with non-stick cooking spray or line with parchment paper. Set aside.
In a large bowl, mash the bananas. Next, mix in the remaining ingredients in the order listed. Batter will be a little thick, but still easy to spread into the pan.
Spoon the mixture evenly into the prepared pan and top with extra chocolate chips. Bake for 25-30 minutes until the edges are golden brown (the center will still look relatively soft!).
Remove from oven and cool in the pan at room temperature for 30 minutes. After that, place the pan in the refrigerator until chilled. The bars will be difficult to cut if they haven’t been chilled.
Cover leftover bars and store in the refrigerator for up to 10 days.
