Easy Cassava Cake with Coconut Sauce

Ingredients

  • 2 1/2 cups sugar
  • 1 small bottle coconut milk
  • 1 kg peeled and grated cassava
  • 150 grams butter
  • 2 eggs
  • a pinch of salt

Sauce

  • 1/2 small bottle coconut milk
  • 4 tablespoons sugar

Preparation

  1. Preheat the oven to 200Β°C and grease a ring mold with butter and flour

  2. Beat the butter with the sugar until creamy

  3. Add the eggs and continue beating

  4. Add the coconut milk and then the cassava and salt

  5. Mix well

  6. Pour the batter into the mold and bake for 40 minutes

  7. Mix the coconut milk and sugar for the sauce

  8. Pour the sauce over the cake and return to the oven

  9. Bake until golden

  10. Remove from the oven and let cool before unmolding

Tips

  1. If grating cassava very finely, squeeze to remove some starch; grating coarsely is acceptable
