Brazilian Cassava Cake with Coconut

Ingredients

  • 2 cups mashed cassava (cassava only, mashed without milk)
  • 3 eggs
  • 1 tablespoon butter
  • 1 cup sugar
  • 1 can coconut milk
  • 2 tablespoons all-purpose flour
  • 1 dessert spoon baking powder

Preparation

  1. Blend sugar, eggs, butter, coconut milk, and flour in a blender

  2. Gradually add the cassava puree

  3. Blend in the baking powder just until combined

  4. Pour the batter into a greased and floured pan

  5. Bake in a preheated oven at 180Β°C for 25 minutes or until golden

  6. Unmold when lukewarm to cold

  7. Serve with caramel sauce
