Potato Salad with Pomegranate Molasses
Ingredients
- 4 large potatoes
- 1/2 cup pomegranate molasses
- 1/2 cup olive oil
- 5 cloves crushed garlic
- 1 tablespoon chopped chili
- 1 tablespoon coriander
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 cups chopped parsley
Preparation
Peel the potatoes, cut them into small cubes, place them in salted water for a few minutes, then drain.
In a deep skillet, heat the oil and fry the potatoes until golden brown. Let them cool.
In a bowl, combine pomegranate molasses, olive oil, crushed garlic, chopped chili, coriander, salt, and black pepper.
Add the potatoes and mix well to coat them with the sauce.
Add the chopped parsley and mix just before serving.
Place in a serving dish and serve immediately.
