Malaysian Kuah Colek Dipping Sauce
Ingredients
Blended
- 15 dried chilies
- 2 cloves garlic
Sauce base
- 3 cups water
- Salt to taste
- Palm sugar or gula melaka to taste
- Seasoning to taste
- Vinegar
- Tamarind juice
- 3 tablespoons chili sauce
Thickener
- Cornstarch
Preparation
Blend the dried chilies and garlic.
Combine the blended mixture with water, salt, palm sugar, seasoning, vinegar, tamarind juice, and chili sauce.
Cook until boiling.
Mix the cornstarch with water to make a slurry and add it to the sauce.
Stir and adjust the thickness as desired.
Taste and ensure a balanced sour, sweet, and salty flavor.
