Vegan Coffee Chia Pudding

Ingredients

Chia pudding

  • 1 cup freshly brewed coffee
  • 3-4 tbsp Chia seeds
  • Some vanilla
  • Maple syrup to your taste

Chocolate mousse

  • 1/2 cup soy cream
  • 2 tbsp cacao powder
  • 2 tbsp maple syrup

Toppings

  • Coconut yoghurt
  • Fresh fruits

Preparation

  1. Let the coffee cool down, mix it with the chia seeds, vanilla, and maple syrup, and let it rest in the fridge overnight.

  2. Mix the soy cream, cacao powder, and maple syrup together and whip until creamy.

  3. Layer the chia pudding with the chocolate mousse, coconut yoghurt, and fresh fruits in a serving dish.
