Healthy Zucchini Oatmeal with Banana and Spices

Ingredients

  • 1/2 cup oats
  • 1/3 grated zucchini (or more if you like)
  • 1/2 ripe mashed banana
  • 1 tsp cinnamon
  • 1 tbsp flax meal
  • 1 1/4 cup almond milk
  • 1 tsp vanilla
  • 1 tsp maple syrup (optional)
  • pinch of salt

Preparation

  1. Add all ingredients to a saucepan.

  2. Place on stovetop over medium heat.

  3. Cook until thickened.

  4. Stir well before serving.

  5. Serve with extra fruit, seeds, and plant-based yogurt.
