Mushroom and Basil Sambal
Ingredients
- 400g shredded wood ear mushrooms
- Lemon basil leaves, 1 bunch (about 50g)
- Sugar, 1 tsp
- Salt, 1 tsp
- Mushroom stock or MSG, 1/2 tsp
- Sweet soy sauce, 1 tbsp
- A little oil for sautéing
- Water, 50ml
Ground spices
- Chilies, 100g (mix of red and bird's eye if desired)
- Shallots, 5
- Garlic, 3 cloves
- Tomato, 1 medium
Preparation
Sauté the ground spices until the chilies are cooked.
Add the mushrooms and a little water and cook until the mushrooms wilt slightly.
Add sweet soy sauce, sugar, salt, and mushroom stock and taste to adjust seasoning.
Add the basil and cook until the water evaporates and the oil separates.
Remove from heat and serve.
Tips
If you do not like mushrooms, shredded chicken can be used instead.
