Chicken and Vegetable Lumpia
Ingredients
- Lumpia wrappers, ready to use
- 300 grams chicken fillet
- 2 carrots, cut into matchsticks
- 1 jicama, cut into matchsticks
- 1 green onion, chopped small
- 1 celery stalk, chopped small
- 3 garlic cloves
- 5 shallots
- 1 tablespoon sweet soy sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon salt
- 1/2 teaspoon mushroom stock
- 1 teaspoon sugar
- 1/2 teaspoon ground pepper
Preparation
Wash the chicken thoroughly and mince it coarsely. Finely chop the garlic and shallots. Sauté them until fragrant, add the chicken, then add all the seasonings and stir until the chicken is cooked. Remove from heat and set aside.
In a large container, combine the cooked chicken with green onion, celery, carrots, and jicama. Mix well.
Take a lumpia wrapper, place 2 tablespoons of filling on it, wrap it, and repeat until all filling is used. Heat oil in a pan.
Fry the lumpia in hot oil over medium heat, turning until golden and cooked. Fry all pieces, then remove and serve with green onion and favorite sauce.
Tips
Carrots and jicama can be cooked with the chicken until done, but leaving them uncooked provides a crunchier texture as preferred.
