Sweet and Sour Chickpea Nourish Bowl
Ingredients
Sweet and sour chickpeas
- 1 tbsp olive oil
- 1/2 large red onion, diced
- 2 cloves garlic, minced
- 1 can chickpeas, drained and rinsed
- 2 tbsp tamari
- 2 tbsp rice vinegar
- 1 tbsp tomato paste
- 1 tbsp maple syrup
- 2 tbsp water
- 1 tbsp cornstarch
Bowl assembly
- avocado
- rice
- zucchini
- tomatoes
- cucumber
- hummus
- sesame seeds
- chilli flakes
Preparation
Heat olive oil in a large pan over medium heat, then add onion and garlic
Cook for 2-3 minutes until softened
Add chickpeas, tamari, rice vinegar, tomato paste, maple syrup, water and cornstarch
Cook for around 5 minutes until the sauce thickens
Assemble the bowl with the sweet and sour chickpeas, avocado, rice, zucchini, tomatoes, cucumber, hummus, sesame seeds and chilli flakes
