Sweet and Sour Chickpea Nourish Bowl

Ingredients

Sweet and sour chickpeas

  • 1 tbsp olive oil
  • 1/2 large red onion, diced
  • 2 cloves garlic, minced
  • 1 can chickpeas, drained and rinsed
  • 2 tbsp tamari
  • 2 tbsp rice vinegar
  • 1 tbsp tomato paste
  • 1 tbsp maple syrup
  • 2 tbsp water
  • 1 tbsp cornstarch

Bowl assembly

  • avocado
  • rice
  • zucchini
  • tomatoes
  • cucumber
  • hummus
  • sesame seeds
  • chilli flakes

Preparation

  1. Heat olive oil in a large pan over medium heat, then add onion and garlic

  2. Cook for 2-3 minutes until softened

  3. Add chickpeas, tamari, rice vinegar, tomato paste, maple syrup, water and cornstarch

  4. Cook for around 5 minutes until the sauce thickens

  5. Assemble the bowl with the sweet and sour chickpeas, avocado, rice, zucchini, tomatoes, cucumber, hummus, sesame seeds and chilli flakes
