Vegan Apple Cake with Crumble Topping
Ingredients
- 5 apples (500g)
- 40g whole cane sugar
- 230g all-purpose flour
- 10g baking powder
- Pinch of salt
- 100g light brown sugar
- 110g unsweetened applesauce
- 110g plant-based milk
- 80g melted margarine
- 100g ground hazelnuts
- 20g sugar
- 40g margarine
Crumble
- 100g ground hazelnuts
- 20g sugar
- 40g margarine
Preparation
Peel and slice 5 apples (500g). Mix the slices with 40g of whole cane sugar and set aside.
In a large bowl, mix 230g of all-purpose flour, 10g of baking powder, a pinch of salt, and 100g of light brown sugar.
Add 110g of unsweetened applesauce, 110g of plant-based milk, and 80g of melted margarine to the dry ingredients. The batter should be smooth enough to form a figure-eight shape.
Stir in three-quarters of the apple mixture.
In another bowl, combine 100g of ground hazelnuts, 20g of sugar, and 40g of margarine by rubbing with fingertips to create a crumble topping.
Pour the batter into a prepared baking mold. Top with the remaining apple slices and spread the crumble mixture over it.
Bake in an oven at 180°C for 45 minutes.
