Choc Chunk Chai Muffins

Ingredients

  • 1 1/2 cup All Purpose Flour
  • 1/4 cup Almond Meal
  • 1 tbs Baking Powder
  • 1 Sachet T2tea Happy Chai Super Latte Powder
  • 1/4 cup Almond Milk
  • 1/2 cup Coconut Yoghurt
  • 1/3 cup Maple Syrup
  • 1/4 cup Coconut Sugar
  • Chocolate Chips/Chunks to taste

Chai Sugar Topping

  • 1 Sachet T2tea Happy Chai Super Latte powder
  • 1 tbs Coconut Sugar

Preparation

  1. Preheat oven to 200°C.

  2. Add flour, almond meal, baking powder, and Happy Chai powder to a large bowl and whisk to combine.

  3. Add remaining ingredients and stir together until just combined and mixture is smooth. Do not over mix.

  4. Pour into muffin tins and sprinkle chai sugar over the top.

  5. Bake for 15-18 minutes or until cooked through and golden on top.

  6. Store in the fridge for 4-5 days. Can also be frozen for up to 3 months.
