Healthy Zucchini Oats Breakfast Bowl

Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp flax meal
  • 1 tsp cinnamon
  • 1/3 grated medium zucchini
  • 1 tsp maple syrup
  • half mashed banana
  • 1 cup unsweetened almond milk
  • pinch salt

Toppings

  • Cranberries
  • blackberries
  • mulberries
  • pomegranate
  • banana
  • nibs
  • peanut butter

Preparation

  1. Mash the banana while cooking.

  2. Cook the mixture on stovetop over medium heat, stirring until it thickens.

  3. Remove from heat and add desired toppings.

  4. Peanut butter is highly recommended as a topping, even if others are omitted.
