Herbed Tofu Patties with Avocado Mango Salad

Ingredients

  • 400 grams blended tofu
  • Fresh or dried basil, sage, oregano
  • Pepper and chilli flakes
  • 1 onion, 8 garlic cloves, 1 cup finely chopped spinach, kale leaves
  • 2 tablespoons nutritional yeast or grated cheese
  • 1 tablespoon tomato paste (optional)
  • 2 tablespoons chopped walnuts
  • 1 teaspoon powdered psyllium husk
  • Avocado
  • Mango
  • Onions
  • Fermented celery
  • Ingredients for lemon vinaigrette

Preparation

  1. Mix all the tofu patty ingredients thoroughly.

  2. If the mixture is moist, add 1 teaspoon of powdered psyllium husk to bind.

  3. Rest the mixture for at least 20 minutes to allow the tofu to absorb flavors.

  4. Shape the mixture into patties.

  5. Pan fry the patties until golden brown.

  6. For the salad, combine avocado, mango, onions, and fermented celery.

  7. Dress the salad with lemon vinaigrette.

  8. Serve the patties with roasted cauliflower and the prepared salad.
