Peanut and Date Porridge Breakfast
Ingredients
- GF oats
- 1 chopped date
- Pinch of salt
- Almond milk
- 1 egg white
- 1 tsp deep roast peanut butter
Toppings
- Coconut kefir
- Pomegranate
- Frozen raspberries
- Bee pollen
- Slice of bread
- Almond butter
- Banana
Preparation
Combine GF oats, chopped date, pinch of salt, almond milk, and egg white in a saucepan and cook over medium heat until thickened and oats are soft
Remove from heat and stir in 1 tsp deep roast peanut butter after cooking.
Toast a slice of bread until golden
Spread toasted bread with almond butter and top with banana slices
Add coconut kefir, pomegranate, frozen raspberries, and bee pollen as toppings to the porridge
