Peanut and Date Porridge Breakfast

Ingredients

  • GF oats
  • 1 chopped date
  • Pinch of salt
  • Almond milk
  • 1 egg white
  • 1 tsp deep roast peanut butter

Toppings

  • Coconut kefir
  • Pomegranate
  • Frozen raspberries
  • Bee pollen
  • Slice of bread
  • Almond butter
  • Banana

Preparation

  1. Combine GF oats, chopped date, pinch of salt, almond milk, and egg white in a saucepan and cook over medium heat until thickened and oats are soft

  2. Remove from heat and stir in 1 tsp deep roast peanut butter after cooking.

  3. Toast a slice of bread until golden

  4. Spread toasted bread with almond butter and top with banana slices

  5. Add coconut kefir, pomegranate, frozen raspberries, and bee pollen as toppings to the porridge
