Pink Pitaya Porridge Parfait

Ingredients

  • 3/4 cup rolled oats
  • 3/4 cup water
  • 1 banana
  • 1 to 2 tbsp sweetener like coco sugar or maple syrup

Preparation

  1. Blend all ingredients in a blender until smooth.

  2. Transfer to a pot.

  3. Cook on medium-high heat while stirring constantly.

  4. Once it thickens, immediately remove from heat.

  5. Stir in about 1/3 cup plant milk until creamy.

  6. Add desired powders and toppings.

  7. Enjoy!
