Spiced Leftover Rice Porridge
Ingredients
- 1 cup leftover cooked red or black rice
- 1 tin coconut milk and 1/2 tin hot water, or 5 tablespoons Nooj food paste mixed with 600 ml hot water
- 2 tablespoons maple syrup or coconut sugar
- Handful of raisins and chopped dates
Chai spice mix
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of ground cardamom or 2 cardamom pods
- Pinch of ground cloves
- Pinch of ground ginger
- Pinch of ground nutmeg
- Pinch of salt
Suggested toppings
- Mango and dark chocolate
- Coconut yogurt
- Granola, cacao nibs, toasted hazelnuts, and hemp seeds
- Fruit puree such as apple, mango, or kiwi
- Dried coconut
- Pomegranate
- Grated pear
Preparation
Combine all the ingredients in a saucepan and heat gently for 15-20 minutes until soft and all liquid is absorbed. Add more milk if needed.
If using cardamom pods, remove them after cooking.
Top with a dash of cinnamon, raisins, maple or coconut sugar, and some tropical or favorite toppings.
