Spiced Leftover Rice Porridge

Ingredients

  • 1 cup leftover cooked red or black rice
  • 1 tin coconut milk and 1/2 tin hot water, or 5 tablespoons Nooj food paste mixed with 600 ml hot water
  • 2 tablespoons maple syrup or coconut sugar
  • Handful of raisins and chopped dates

Chai spice mix

  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of ground cardamom or 2 cardamom pods
  • Pinch of ground cloves
  • Pinch of ground ginger
  • Pinch of ground nutmeg
  • Pinch of salt

Suggested toppings

  • Mango and dark chocolate
  • Coconut yogurt
  • Granola, cacao nibs, toasted hazelnuts, and hemp seeds
  • Fruit puree such as apple, mango, or kiwi
  • Dried coconut
  • Pomegranate
  • Grated pear

Preparation

  1. Combine all the ingredients in a saucepan and heat gently for 15-20 minutes until soft and all liquid is absorbed. Add more milk if needed.

  2. If using cardamom pods, remove them after cooking.

  3. Top with a dash of cinnamon, raisins, maple or coconut sugar, and some tropical or favorite toppings.
