Vegan Chickpea Cookie Dough Balls
Ingredients
- 1.5 cans chickpeas
- Rolled oats
- 2 tablespoons peanut butter
- Vanilla (to taste)
- Stevia (to taste)
- Chocolate chips
Preparation
Mix the chickpeas, rolled oats, peanut butter, vanilla, and stevia for approximately 30-45 seconds until combined and smooth, but not like hummus.
Add chocolate chips and mix well.
Form the mixture into balls or cookies.
If the mixture is too smooth, add a little more oats or oat flour.
The dough balls can be frozen, reheated, or baked with additional flour if desired.
