Vegan Chickpea Cookie Dough Balls

Ingredients

  • 1.5 cans chickpeas
  • Rolled oats
  • 2 tablespoons peanut butter
  • Vanilla (to taste)
  • Stevia (to taste)
  • Chocolate chips

Preparation

  1. Mix the chickpeas, rolled oats, peanut butter, vanilla, and stevia for approximately 30-45 seconds until combined and smooth, but not like hummus.

  2. Add chocolate chips and mix well.

  3. Form the mixture into balls or cookies.

  4. If the mixture is too smooth, add a little more oats or oat flour.

  5. The dough balls can be frozen, reheated, or baked with additional flour if desired.

  6. Eat and enjoy!
