Classic Brazilian Milk Cupcakes with Lemon

Ingredients

  • 100 ml milk
  • 3 eggs
  • 150 g sugar
  • 150 g all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon margarine
  • Zest of 1 lemon

Preparation

  1. Preheat the oven to 180Β°C and line muffin tins with paper liners

  2. In an electric mixer, beat eggs, sugar, and lemon zest on medium speed until creamy and homogeneous

  3. Add margarine and milk, then mix for 3 to 4 minutes until well incorporated

  4. Reduce speed to low, add flour mixed with baking powder, and beat until creamy

  5. Pour small portions of batter into the paper liners

  6. Bake for 15 to 20 minutes, or until a toothpick inserted in the center comes out clean

  7. Remove cupcakes from the oven and let cool completely before serving
