Classic Brazilian Milk Pudding Without Holes

Ingredients

  • 6 tablespoons sugar
  • 3 eggs
  • 1 (14-ounce) can sweetened condensed milk
  • 14 ounces whole milk

Preparation

  1. Caramelize a 20 cm (8 inch) tube pan with sugar over medium heat, spreading the sugar to cover the entire interior. Set aside.

  2. In a blender, beat the eggs until foamy. Add the sweetened condensed milk and milk and blend for 1 minute.

  3. Let the mixture rest for 15 minutes to allow the foam to settle, then carefully pour into the caramelized mold without including the foam.

  4. Place the mold in a water bath and cook on the stove or in the oven for about 1 hour, or until the pudding is set.

  5. Let cool, then refrigerate for about 2 hours before unmolding.
