Authentic Edirne Pan-Fried Liver

Ingredients

  • 1 kg calf liver
  • Liquid oil
  • Salt
  • Flour

Preparation

  1. Remove the membrane from the calf liver and freeze it overnight in the freezer, then slice it thinly while frozen.

  2. Salt the liver slices.

  3. Coat the liver in flour.

  4. Fry in hot oil for 1-2 minutes.

Tips

  1. Ensure the calf liver is from a cow less than two years old.

  2. Slice the liver very thinly for best results.
