Plant-Based Salmon En Croute with Sides
Ingredients
- plant salmon fillet
- mozzarella
- puff pastry
- chilli flakes
- sea salt
- beaten egg
- seasonal gold potatoes
- broccoli
Preparation
Seal the plant salmon fillet in a frying pan.
Assemble the en croute with pastry base, thinly sliced mozzarella, fillet, chilli flakes, sea salt, and pastry top, then brush with beaten egg.
Bake for 25 minutes at 190°C.
Boil the seasonal gold potatoes until tender, then butter and add chives.
Boil the broccoli for 3 minutes.
