Pandan and Coffee Layered Pudding
Ingredients
Pandan layer
- 6 grams Gellamix
- 6 tablespoons sugar
- A pinch of salt
- A little pandan juice
- 90 ml thick coconut milk
- 600 ml water
Coffee layer
- 6 grams Gellamix
- Brown sugar (to taste)
- 2 sachets 3-in-1 coffee
- Mocha paste (as needed)
- 90 ml thick coconut milk
- 600 ml water
- A pinch of salt
Preparation
Mix sugar and Gellamix until well combined.
Add water, thick coconut milk, and pandan juice to the mixture and cook until boiling.
Pour the mixture into a mold and allow it to partially set.
For the coffee layer, take a small amount of water and cook it with brown sugar until the sugar dissolves, then strain.
Mix Gellamix and 3-in-1 coffee until well combined.
Add the remaining ingredients and stir well.
Cook the mixture until boiling.
Pour over the pandan layer, let it cool at room temperature, and then refrigerate.
Once cold, the pudding is ready to serve.
Tips
Gellamix can be bought from online stores like Toko Pedia.
Agar-agar or Nutrijel can be used as substitutes, but the taste may differ; Gellamix is recommended for better flavor.
For enhanced color in the pandan layer, mix pandan with daun suji leaves, though it is optional.
