Spicy Fried Gourami with Sambal
Ingredients
- 1 whole gourami fish
- Lime juice or vinegar, as needed
- Stock powder or sugar, as needed
- Cooking oil, as needed
- Cornstarch, a light sprinkle
Spice paste
- 100 grams curly red chilies
- 7 shallots
- 1 garlic clove
- 1 medium tomato
- Salt, as needed
Preparation
Prepare the spice paste by grinding 100 grams of curly red chilies, 7 shallots, 1 garlic clove, 1 medium tomato, and salt as needed.
Clean and cut the gourami fish to preference.
Marinate the fish with salt and lime juice, then let it sit for 15-20 minutes.
Rinse and drain the fish, then lightly dust it with cornstarch.
Fry the fish in hot oil until cooked to preference, then set aside.
Sauté the spice paste until cooked, add stock powder or sugar, then add lime juice or vinegar and cook on low heat until fully done.
Mix the spice paste with the fried fish. If you prefer the fish crispy, wait until the sauce is completely cool before mixing; if you want the flavors to infuse into the fish, mix immediately after the paste is cooked.
