Vegan Tofu Bolognese with Pasta
Ingredients
- 1 (14 oz) pack extra firm tofu
- 4 cups tomato sauce (or to taste)
- dried pasta (as needed)
Marinade
- 1 1/2 tbsp gluten-free tamari or soy sauce
- 3 tbsp nutritional yeast
- 1 1/2 tsp chili powder
- 1 1/2 tsp smoked paprika
- 1 1/2 tsp chipotle powder
- 3/4 tsp garlic powder
- 1 1/2 tbsp olive oil (optional)
Preparation
Pat dry the tofu and crumble with your hands to resemble ground meat. Set aside.
Mix together the marinade ingredients. Rub the marinade evenly over the tofu crumbles.
Bake the tofu on a parchment-lined baking sheet at 375°F. Toss after 15 minutes and continue baking until browned but not burnt.
Mix the baked tofu with tomato sauce and simmer for 15 minutes until slightly thickened.
Pasta cooking
After the sauce has simmered for a few minutes, add the pasta, cover, and simmer for the time specified on the pasta package.
Alternatively, cook the pasta separately according to package directions and add to the sauce when serving.
Tips
Use about 4 cups of tomato sauce (equivalent to two 15-ounce cans) or adjust to your desired sauciness.
