Baked Diced Beef and Vegetables
Ingredients
- 250 grams diced beef
- 1 potato
- 1 eggplant
- 2 tomatoes
- 1 onion
- 1 bell pepper
For the sauce
- 4 cloves garlic
- 1 tablespoon tomato paste
- 1/2 cup olive oil
- 1 cup water
- 1 teaspoon salt
- 1 teaspoon oregano
- 1 teaspoon black pepper
- 1 teaspoon cumin
Preparation
Peel the potatoes and onions and cut them into cubes.
Cut the bell pepper into cubes.
Peel the eggplant in a striped pattern and cut it into cubes.
Cut the tomatoes into cubes, then place all ingredients, including the meat, in a baking dish.
For the sauce, place the tomato paste in a bowl.
Add water and the spices to the bowl.
Grate the garlic and add it to the mixture.
Mix everything well.
Pour the sauce over the ingredients in the baking dish.
Place the dish in the oven and bake until the meat and vegetables are tender.
