Turkish Kalburabastı Pastry

Ingredients

  • 50 grams butter
  • 1/2 cup vegetable oil
  • 1 egg
  • 2 tablespoons semolina
  • 2 tablespoons yogurt
  • 1 packet vanilla
  • 1 packet baking powder
  • 2 cups flour

For the syrup

  • 2 cups sugar
  • 2 cups water
  • 1 slice lemon

For the filling

  • Walnuts or pistachios

Preparation

  1. First, prepare the syrup by adding sugar, water, and a slice of lemon to a pot and boiling on medium heat for 11-12 minutes, then set aside to cool

  2. In a bowl, combine all ingredients except flour and mix well

  3. Gradually add flour and knead to form a soft, non-sticky dough

  4. Divide the dough into 16 walnut-sized pieces and shape them, using a mold if available

  5. Fill each piece with walnuts or pistachios, seal the edges, and place seam-side down on a baking sheet

  6. Bake in a preheated 170°C oven with top and bottom heat until golden brown

  7. Pour the cold syrup over the hot pastry and let it sit for 2-3 hours before serving
