Spicy Nacho-Style Feast with Chilli Wedges

Ingredients

  • large baking potato
  • 1/4 bag meat-free mince
  • water
  • vegetable stock pot
  • small tin of beans
  • half tube of tomato puree
  • squirt of chilli puree
  • sweet smoked paprika
  • chilli powder
  • garlic powder
  • onion salt
  • 1 tablespoon honey or sweetener
  • egg
  • mozzarella cheese
  • tiger bread
  • butter
  • Italian seasoning

Preparation

  1. Slice a large baking potato into wedges

  2. Spray the potato wedges with oil, season them, and cook in an air fryer for 30 minutes in 10-minute cycles

  3. Prepare the chilli by cooking 1/4 bag of meat-free mince with water and a vegetable stock pot

  4. Add a small tin of beans, half a tube of tomato puree, a squirt of chilli puree, sweet smoked paprika, chilli powder, garlic powder, onion salt, and 1 tablespoon of honey or sweetener to the mince mixture and cook until done

  5. Partially fry an egg

  6. Place the chilli in a small dish, top with the partially fried egg and grated mozzarella cheese, and bake in a hot oven for 5 minutes

  7. For garlic bread, spread butter on tiger bread, season with Italian seasoning and garlic powder, and bake in the oven alongside the chilli

Tips

  1. This recipe makes plenty for leftovers to use in other meals
