Baked Oats with Rhubarb
Ingredients
- 1/2 cup rolled oats
- 1/2 cup almond milk
- 1/2 mashed banana
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1 scoop vital proteins collagen
- fresh rhubarb (chopped)
- 2 tablespoons ghee
- 1/4 cup coconut sugar
- dash of vanilla extract
- squeeze of fresh lemon
Preparation
Preheat oven to 350°F.
Mix all ingredients together except for the rhubarb and set aside.
Chop the washed rhubarb into cubes.
Cook the rhubarb in a pan with 2 tablespoons ghee, 1/4 cup coconut sugar, a dash of vanilla extract, and a squeeze of fresh lemon.
Fold the rhubarb mixture into the oats mixture.
Bake for 20 minutes.
Top with vanilla Greek yogurt if desired.
