Baked Oats with Rhubarb

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup almond milk
  • 1/2 mashed banana
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1 scoop vital proteins collagen
  • fresh rhubarb (chopped)
  • 2 tablespoons ghee
  • 1/4 cup coconut sugar
  • dash of vanilla extract
  • squeeze of fresh lemon

Preparation

  1. Preheat oven to 350°F.

  2. Mix all ingredients together except for the rhubarb and set aside.

  3. Chop the washed rhubarb into cubes.

  4. Cook the rhubarb in a pan with 2 tablespoons ghee, 1/4 cup coconut sugar, a dash of vanilla extract, and a squeeze of fresh lemon.

  5. Fold the rhubarb mixture into the oats mixture.

  6. Bake for 20 minutes.

  7. Top with vanilla Greek yogurt if desired.
