Blueberry Crisp with Oats and Fresh Blueberries
Ingredients
- 1 cup rolled oats
- 1 cup pecan halves
- 1/2 cup almond meal
- 1/2 cup unsweetened flaked coconut
- pinch of salt
- pinch of cinnamon
- 1/4 cup + 2 tablespoons olive oil
- 1/3 cup real maple syrup
- 4 cups fresh blueberries
Preparation
Mix topping ingredients.
In the dish, layer the blueberries, then add the topping.
Bake for 25-35 minutes at 350 degrees until bubbly and then let it rest or set.
It's yummy either way.
Tips
Cover with foil if it's getting too brown too fast.
You can top it with a little glaze, or serve with vegan ice cream, yogurt, or just straight up cold out of the fridge.
