Brazilian Orange Cake with Citrus Glaze
Ingredients
Cake
- 1 medium orange, with peel
- 3 eggs
- 1 cup oil or 2 heaping tablespoons butter
- 1 cup sugar
- 1.5 cups all-purpose flour
- 1/2 cup cornstarch
- 1 tablespoon baking powder
Glaze
- Juice of 1 medium orange
- 2 tablespoons sugar
Preparation
Cake
Preheat the oven to 180Β°C (350Β°F).
Grease and flour a round baking pan.
Cut the orange into 4 pieces and remove any visible seeds.
In a blender, combine the orange, eggs, oil (or butter), and sugar. Blend until smooth.
In a bowl, mix the flour, cornstarch, and baking powder.
Gradually add the blender mixture to the dry ingredients, stirring until a smooth batter forms.
Pour the batter into the prepared pan.
Bake for 35 minutes, or until a toothpick inserted comes out clean.
Glaze
In a small saucepan, combine orange juice and sugar.
Bring to a boil over medium heat, then remove from heat.
Pour the glaze over the warm cake.
