Brazilian Orange Cake with Citrus Glaze

Ingredients

Cake

  • 1 medium orange, with peel
  • 3 eggs
  • 1 cup oil or 2 heaping tablespoons butter
  • 1 cup sugar
  • 1.5 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 tablespoon baking powder

Glaze

  • Juice of 1 medium orange
  • 2 tablespoons sugar

Preparation

Cake

  1. Preheat the oven to 180Β°C (350Β°F).

  2. Grease and flour a round baking pan.

  3. Cut the orange into 4 pieces and remove any visible seeds.

  4. In a blender, combine the orange, eggs, oil (or butter), and sugar. Blend until smooth.

  5. In a bowl, mix the flour, cornstarch, and baking powder.

  6. Gradually add the blender mixture to the dry ingredients, stirring until a smooth batter forms.

  7. Pour the batter into the prepared pan.

  8. Bake for 35 minutes, or until a toothpick inserted comes out clean.

Glaze

  1. In a small saucepan, combine orange juice and sugar.

  2. Bring to a boil over medium heat, then remove from heat.

  3. Pour the glaze over the warm cake.
