Crispy Air Fried Cauliflower Gnocchi

Ingredients

  • frozen cauliflower gnocchi
  • coconut or olive oil spray
  • broccoli
  • cauliflower
  • mushrooms
  • 1/2 cup water
  • zucchini noodles
  • 1/2 cup vegan red sauce
  • nutritional yeast
  • optional tofu or tempeh

Preparation

  1. Spray the bottom of the air fryer with coconut or olive oil spray and place frozen gnocchi flat in the basket. Set to 400°F and air fry for 8-12 minutes depending on desired crispiness.

  2. Add broccoli, cauliflower, and mushrooms to a pan with 1/2 cup of water and steam over medium heat for 5 minutes.

  3. Once veggies are softened, add zucchini noodles and 1/2 cup of vegan red sauce to the pan on medium to low heat.

  4. When gnocchi is crispy, stir it into the pan and allow it to soak in the sauce. Optional: add protein like tofu or tempeh.

  5. Top with nutritional yeast and serve.
