Coconut Ginger Overnight Oats

Ingredients

  • 1/2 cup oats
  • 1 tbsp coconut flakes
  • 1 tbsp ground flax seed
  • 1/2 tsp ground ginger
  • 1/2 cup almond milk
  • 1 ripe banana
  • Pinch of salt

Preparation

  1. Add all ingredients except banana to a container.

  2. Mix and store in fridge overnight.

  3. In the morning, add mashed banana to oats.

  4. Serve with some fruit and plant-based yogurt, and optionally add more coconut and nibs on top.
