Fruit Parfait with Vanilla Yogurt and Cookie Crumble
Ingredients
Cookie dough crumble
- 3/4 cup rolled oats (ground into flour)
- 2 tablespoons peanut butter flour
- 3 dates
- Optional: chocolate chips
Vanilla yogurt
- 1 block tofu
- 1 tablespoon vanilla protein powder
- 1/2 teaspoon vanilla extract
- 1 tablespoon maple syrup
Fruits
- Assorted fresh fruits
Preparation
Pulse the cookie dough crumble ingredients in a food processor or blender, adding a little liquid if necessary to bind them together.
Blend the vanilla yogurt ingredients together starting on low speed, then increase speed; scrape down the sides and blend again until smooth.
Assemble the parfait by layering fresh fruits, vanilla yogurt, and cookie dough crumbles in a serving glass or bowl
