Fruit Parfait with Vanilla Yogurt and Cookie Crumble

Ingredients

Cookie dough crumble

  • 3/4 cup rolled oats (ground into flour)
  • 2 tablespoons peanut butter flour
  • 3 dates
  • Optional: chocolate chips

Vanilla yogurt

  • 1 block tofu
  • 1 tablespoon vanilla protein powder
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon maple syrup

Fruits

  • Assorted fresh fruits

Preparation

  1. Pulse the cookie dough crumble ingredients in a food processor or blender, adding a little liquid if necessary to bind them together.

  2. Blend the vanilla yogurt ingredients together starting on low speed, then increase speed; scrape down the sides and blend again until smooth.

  3. Assemble the parfait by layering fresh fruits, vanilla yogurt, and cookie dough crumbles in a serving glass or bowl
