Pear and Almond Crisp

Ingredients

Base

  • 6 large pears, peeled and cut into sixths
  • 1 teaspoon ground cinnamon
  • 2 tablespoons honey
  • 1 tablespoon olive oil

Topping

  • 1/2 cup flaked almonds
  • 1 cup ground almonds
  • 1 cup whole jumbo oats
  • 1/3 cup olive oil
  • 2 tablespoons honey
  • 1 tablespoon ground cinnamon
  • optional extra pear for topping

Preparation

  1. Preheat oven to 180°C.

  2. Put all the base ingredients in an oven-proof dish, mix to combine and bake for 20 minutes.

  3. While that’s happening, mix all the topping ingredients in a bowl.

  4. Add the topping mix on top of the pears.

  5. If using the extra pear, peel, quarter and put on top.

  6. Lower the heat to 170°C and bake for 45 minutes in the middle of the oven.

  7. Let it cool slightly and serve.

Serving suggestions

  1. Can be served as a weekend breakfast with yogurt or as a dessert with custard or ice cream.
