Classic 3-Ingredient Sponge Cake

Ingredients

  • 8 eggs
  • 10 tablespoons sugar
  • 10 tablespoons all-purpose flour, sifted
  • 2 teaspoons baking powder (optional)

Preparation

  1. Beat eggs in a mixer until creamy

  2. Gradually add sugar while beating

  3. Gradually add the sifted flour while beating

  4. If using, add baking powder and gently fold in with a whisk

  5. Pour the batter into a greased and floured 9-inch cake pan

  6. Bake in a preheated oven at 350Β°F (180Β°C) for 25 to 35 minutes or until a toothpick inserted comes out clean

Notes

  1. This batter rises significantly even without baking powder so it is optional
