Fluffy Banana Pancakes with Hazelnuts and Chocolate Sauce

Ingredients

  • 1 banana
  • 4 dl oats (gluten free if you want)
  • 4 dl soy or other vegan milk
  • 2 tbsp chia seeds
  • 2 tbsp coconut oil
  • 2 tsp baking powder
  • 0.5 tsp salt

Chocolate sauce

  • 4 tbsp water
  • 3 tbsp agave or maple syrup
  • 2 tbsp cacao

Preparation

  1. Blend the ingredients for the pancake batter in a high speed blender.

  2. Heat a frying pan (optional to add a little bit of oil if needed) and fry the pancakes on medium heat for about 2 minutes per side until golden brown. (I use about 4 tablespoons batter per pancake and make 3 pancakes at a time.)

  3. Make the chocolate sauce: add ingredients to a saucepan, whisk and let it sit on medium heat until it starts to bubble, then remove from heat.

  4. Serve your stack with extra sliced bananas and chopped hazelnuts.
