Indonesian Fried Rice Noodles

Ingredients

  • 1 egg
  • 100 grams rice noodles
  • Sliced squid, meatballs, chicken, shrimp, etc., to taste
  • 1 teaspoon oyster sauce
  • 1 teaspoon soy sauce
  • Sweet soy sauce, as needed
  • 3 stalks choy sum, sliced
  • Salt, pepper, granulated sugar, seasoning, as needed
  • Cooking oil, as needed

Ground spices

  • 4 cloves garlic
  • 2 shallots
  • 1 candlenut

Preparation

  1. Soak the rice noodles in hot water mixed with 1 teaspoon cooking oil until soft, then drain and mix with sweet soy sauce. Set aside.

  2. Heat oil in a pan and sauté the ground spices until fragrant, then push to the side.

  3. Add the squid, meatballs, and other proteins, stirring well.

  4. Add the noodles, choy sum, oyster sauce, soy sauce, salt, sugar, pepper, and seasoning. Stir until combined, adjust seasoning to taste, and remove from heat.
