Quick Vegan Veggie Sandwich with Basil Pesto

Ingredients

  • Basil pesto (see recipe below)
  • Avocado
  • Leafy greens
  • Tomato slices
  • Sourdough bread
  • Melty shredded vegan cheese

Basil pesto

  • 3 cups basil
  • Juice of 1 lemon
  • 1/4 cup olive oil
  • 1/3 cup pine nuts (or cashews)
  • 2 garlic cloves
  • Himalayan sea salt, to taste

Preparation

  1. Spread basil pesto on sourdough bread slices

  2. Layer avocado, leafy greens, and tomato slices on one slice

  3. Top with shredded vegan cheese

  4. Cover with the other slice of bread and press gently

  5. Toast in a pan until the bread is golden and the cheese is melty

Basil pesto

  1. Add all ingredients except olive oil to a food processor

  2. Pulse until evenly chopped

  3. Slowly add olive oil through the top of the processor

  4. Pulse until combined
