Easy Vegan Vegetable Sandwich with Homemade Pesto

Ingredients

Sandwich

  • Basil pesto
  • avocado
  • leafy greens
  • tomato slices
  • sourdough bread
  • shredded vegan cheese

Basil pesto

  • 3 cups fresh basil
  • juice of one lemon
  • 1/4 cup olive oil
  • 1/3 cup pine nuts (or cashews in a pinch)
  • 2 garlic cloves
  • Himalayan sea salt, to taste

Preparation

  1. Add all ingredients except olive oil to a food processor.

  2. Pulse until evenly chopped.

  3. Slowly add olive oil through the top and pulse until combined.

  4. Spread the basil pesto on one slice of sourdough bread.

  5. Layer avocado, leafy greens, and tomato slices on the bread.

  6. Top with shredded vegan cheese and the other slice of bread.

  7. Heat the sandwich in a skillet over medium heat until the bread is toasted and the cheese is melted, flipping once.
