Simple Vegan Veggie Sandwich with Pesto

Ingredients

Pesto

  • 3 cups basil
  • Juice of one lemon
  • 1/4 cup olive oil
  • 1/3 cup pine nuts or cashews
  • 2 garlic cloves
  • Himalayan sea salt to taste

Sandwich

  • Avocado
  • Leafy greens
  • Tomato slices
  • Sourdough bread
  • Melty shredded vegan cheese
  • Prepared basil pesto

Preparation

Pesto

  1. Add all ingredients except olive oil to a food processor

  2. Pulse until evenly chopped

  3. Slowly add olive oil through the top of the processor and pulse until combined

Sandwich assembly

  1. Spread prepared basil pesto on sourdough bread slices

  2. Add avocado, leafy greens, tomato slices, and melty shredded vegan cheese

  3. Assemble the sandwich and serve immediately
