Basic Savoury Tofu and Vegetable Scramble

Ingredients

  • 1/2 tsp fennel seeds
  • 1 carrot (grated)
  • 1/2 zucchini (grated)
  • a handful of cherry tomatoes (halved)
  • firm tofu (as desired)
  • 1 tblsp hemp seeds
  • smoked paprika
  • cumin
  • pepper
  • nutritional yeast
  • a few splashes of water

Preparation

  1. Throw the fennel seeds and vegetables in a pan to cook.

  2. Crumble the tofu into the pan.

  3. Add the spices and nutritional yeast.

  4. Cook until cooked, adding splashes of water to prevent sticking and mix in the spices.
