Simple Overnight Oats with Banana and Nuts

Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 1 tbsp walnuts
  • 1 tbsp pumpkin seeds
  • Pinch of salt
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 3/4 cup coconut milk
  • 1/4 cup milk as needed
  • 1 mashed banana

Preparation

  1. Combine all dry ingredients and then add vanilla and 3/4 cup milk, excluding banana.

  2. Stir to combine and set in fridge overnight to soak.

  3. Add mashed banana and extra milk as needed to adjust consistency.
